Aloo Gajar Matar Recipe:

This is very easy and delicious recipe of aloo, Punjabi style dry veggie dish made from potatoes(aloo), carrots( gajar), and peas( matar).This simple veggie dish does not need much experience, even bachelor's or first-time cooks can make it easily.Generally, the entire dish is cooked in pressure cooker, but you can cook in the pan also.This dish required very fewer ingredients and is not heavily spiced.This recipe goes well with bread or rice.

Ingredients For Aloo Gajar Matar Recipe:

3 aloo(potatoes)
2 medium Gajar ( carrots)
3/4 cups Matar(peas)
1 teaspoon jeera(cumin seeds)
1-inch ginger finely chopped
1-2 chopped green chilies
1 pinch Hing( asafoedita)
2-3 tablespoon water
1.5 tablespoon oil
1 tablespoon chopped coriander leaves
salt as required

Step by step method of Aloo Gajar Matar Recipe:

1. Rinse the vegetables in water, peel and then chop potatoes and carrots.Also, chop the ginger and green chilies.Chops the carrots and potatoes into small pieces.

2. Heat oil in a pressure cooker, after 1-2 minute add cumin seeds to the oil and leave them to crackle.

3. After that add the chopped green chilies and ginger in the pressure cooker.

4. Now add potatoes, carrots, and peas into the cooker.Add a pinch of Hing and saute for 2-3 minutes.

5. After that add salt and 2-3 tbsp water.Close the pressure cooker and cook for 2-3 whistles or until the vegetables become tender.

6. When all vegetables are finally cooked then remove the vegetables in a bowl and garnish with coriander leaves.Serve Aloo Gajar Matar Recipe with roti or parathas.
