Dhaba style Panjabi Egg Curry,it goes well with jeera rice or plain rice.It is exceptionally good when you are not in a mood to cook something elaborate but wish to make quick tasty food.It can be served with roti,plain paratha or flavored rice like jeera rice,biryani rice,pulao,coconut milk rice or any biriyani varieties.Along with this, you can also try Egg Butter Masala,Simple Egg Curry, and Kadhai Egg Masala.

Ingredients For Panjabi Egg Masala Recipe:

5 boiled eggs
2 cup cubed onion
1 cup chopped tomatoes
2 tbsp oil
1 small bay leaf
1 small cinnamon stick
2 green cardamoms
2 cloves
2 tsp ginger garlic paste
1 tsp red chili powder
1 tsp garam masala powder
salt as required
1/2 tsp Kasuri methi(optional)
Few chopped coriander leaves

Step by step method of Panjabi Egg Masala Recipe:

1. Add a chopped onion in a blender jar.

2. Make a fine paste of onions.Remove the paste in a bowl and keep aside.

3. After that make a puree of tomatoes in the same jar.

4. Remove the tomatoes puree in a blow and keep aside.

5. Boiled the egg and remove the shell from it.Heat oil in a pan ,and them till they become golden.

6. Now add 2 tbsp oil in a pan and heat it after that add bay leaf,cloves, and cardamom.Fry them until they become golden.

7. After that add onion paste ,saute the paste till the aroma of onion paste is goes off and the paste turns golden.

8. Add the ginger garlic paste to the mixture and saute until the raw smell disappears.

9. Now add tomato puree and saute until the raw smell goes away.

10. After that add red chili powder,turmeric powder,garam masala and salt to the mixture.

11. Mix well the all masala and fry till it begins to smell good and oil begins to separate from the mixture.

12. Now pour enough water to make a gravy.Boil the gravy until it thickens and oil begins to separate.Taste the gravy and adjust the salt if needed.

13. Add fried eggs and stir well.If you want to add Kasuri methi then add it now.Cook on a medium flame for 2-3 minutes.

14. Garnish with chopped coriander leaves and serve with roti or rice.
