This is north Indian style egg curry made with fresh ground kadhai masala.A mixture of spices like coriander leaves.red chilies and other basic ingredients are used to make this curry very delicious.Kadai Egg Masala is a mixture of capsicum,egg and may species which make this egg versatile.It tastes delicious,full of flavors from the fresh ground kadhai masala.Very easy to cook and goes well with jeera rice and roti.If you are looking for more egg recipes then try this

Ingredients For Kadai Egg Masala Recipe:

5 boiled egg
1 cup cubed capsicum
1 cup cubed onions(layer separated)

For Powder:

2 tbsp coriander seeds
2-3 dry red chilies

Ingredients for gravy:

2 chopped onions
2 chopped tomatoes
2 tsp ginger garlic paste
1 tsp garam masala
3/4 tsp red chili powder
Few chopped coriander leaves for garnish
salt as needed

Step by step method of Kadai Egg Masala Recipe:

1. Add coriander seeds and dry red chilies to a grinder jar.

2. Make coarse or fine powder of the coriander seeds and dry red chilies.Note that do not make it very coarse.

3. in the same grinder jar make the fine paste of onions.puree of tomatoes and fine paste of cashews.

4. Heat an oil in a kadhai,add the boiled egg.Saute egg in an oil till they look golden.Remove to a plate and keep aside.

5. To the same pan add 1 cup capsicum,1 cup cubed tomatoes and 1 cup cubed onions.Fry these on a medium flame for 3-4 minutes.Keep these aside along with the eggs.

6. After that add some more oil to the kadhai,add ginger garlic paste and saute until the aroma of it disappears.

7. Now add the kadhai masala and saute on a low flame until it begins to smell good.

8. Add Tomato and onion puree to the mixture and saute for 2-3 minutes.

9. Now add red chili powder,salt, and garam masala and stir well.

10. Saute the mixture till it becomes thicken a bit,then add cashew paste.

11. Now saute the mixture till the mixture begins to leave the side of the pan.

12. After that add 1 cup water and bring to a boil.Adjust the water slightly to bring it to a consistency.

13. Cook the gravy for about 3-4 minutes.

14.Now add roasted onions,capsicum, and egg to the gravy.

15. Mix well and simmer for 2 minutes.Garnish with coriander leaves and serve with rice or roti.
