Red Coconut chutney is also known as a bright red colored Kerala style chutney.This chutney very easy to cook The red chilies add some heat and smoke to the chutney.Test of this chutney totally different because of red chilies and onion added to this chutney.This red chutney makes for a good companion with south Indian tiffin.

Serves:3 Serving

Ingredients For Red Coconut Chutney:

For chutney:

1 cup tightly packed fresh smash coconut
1/2 tablespoon chopped sambar onion
2-3 dry broken red chilies
1/2-inch ginger
salt as requried

For Tempering

1/2 teaspoon mustard seed
8-9 curry leaves
1 tablespoon chopped sambar onion
1/2 tablespoon urad dal
1 tablespoon coconut oil

Step by step method of Red Coconut Chutney Recipe : 

1. Take 1/3 cup tightly packed fresh smash coconut,1/2 tbsp chopped sambar onion,2-3 dry red chilies and 1/2-inch ginger in a small grinder jar.If you want then you can also add garlic.

2. Add salt and water depending on your grinder.

3. Now grind the above mixture to a smooth chutney.

4. Now remove the chutney in a bowl and keep it aside.

5. Add 1 tbsp coconut oil in a small pan and heat it.

6. Now add 1/2 tsp mustard seeds and allow them to brust.

7. After that add 1/2 tsp urad dal and curry leaves.

8. Until the urad dal becomes golden fry them.

9. Now add 1 tbsp sambar onions and 8-10 curry leaves to the above mixture.

10. Until the sambar onion turns to light golden saute them.

11. Now add this tempering mixture along with its oil to the red coconut chutney.

12. Now mix well all the mixture.

13. Serve this yummy red coconut chutney with idli,dosa and medu vada.
