Sabudana Khichdi is well-known Maharashtrian breakfast.Sabudana Khichdi is usually made during fasting days.It is one of the easy and tasty snack during fasting days.Another most famous Maharashtrian breakfast that is Aloo  Poha,must try it.

Serves:3 Serving

Ingredients For Sabudana Khichdi:

1 cup sabudana
2 potatoes
1/2 cup roasted peanuts
8-9 curry leaves
1 teaspoon grated ginger(optional)
1 chopped green chili
1 teaspoon cumin
1/4 cup grated fresh coconut
Sugar as required
Rock salt as required
1 teaspoon lemon juice(as required)
2 tablespoon oil

Step by step method of sabudana khichdi:

1. Pick 1 cup sabudana and soak the sabudana in water for about 2 hours or until sabudana become soft.

2. Add 1/2 cup peanut in a pan.  Until the peanuts become crunchy roast them and keep aside.

3. Now make the coarse powder of peanuts in a motor-pastel.

4. Now add the coarsely powdered roasted peanuts,salt, and sugar in the drained sabudana and mix them well.

5. After that add 2 tbsp oil in a kadhai and heat it.Now add 1 tsp cumin seeds and let them crackle.When they are browned add 1 chopped green chili.Fry for a minute on a low flame.

6. Add chopped boiled potatoes,saute for 1 or 2 minutes.

7. Now add sabudana to the mixture and saute it.Until sabudana become brown stirring continuously on a slow flame.

8. After that garnish the sabudana khichdi with few chopped coriander leaves and grated coconut.drizzle with 1 tsp lemon juice.
